Roasted Cauliflower
Roasted
Ever wonder if there is variety besides a bake potato and peas as a side
dish. Well here is one answer. An underrated vegetable, in my opinion,
prepared as mentioned below spices up an ordinary meal. Try it and
you'll see what I am talking about.
1 head of cauliflower cut in 1 1/2-in. florets
2 red onions, each cut into 8 wedges
2 Tbsp. roasted-garlic olive oil
1/2 tsp. salt
1/2 tsp. pepper
1 Tbsp. chopped parsley
1 Tbsp. grated Parmesan cheese
Heat oven to 475 degrees In nonstick roasting pan, mix cauliflower,
onions, oil, salt and 1/4 tsp pepper. Roast 15 minutes; toss. Roast 5 to
10 minutes, until lightly charred and tender. Transfer to platter and top
with 1/4 tsp. pepper, the parsley, and cheese.
