Salmon Loaf With Cucumber - Dill Sauce

----Salmon Loaf----
1 16 Oz Can Salmon -- Drained & Flaked
1/2 cup Herb Stuffin Mix
1/2 cup Mayonnaise
1/2 cup Onion -- Chopped
1/4 cup Celery
1/4 cup Red And Green Bell Peppers -- Chopped
1 Egg -- Beaten
1/2 Tsp Salt -- To Taste
1 Tsp Jerk Seasoning
1/4 Tsp Ground Red Pepper
1/4 Tsp Ground White Pepper
----Sauce----
2 Tbsp Lemon Juice
1/2 cup Sour Cream
1/2 cup Mayonnaise
1/2 cup Cucumber -- Finely Chopped
2 Tbsp Onion -- Chopped
1 Tbsp Fresh Dill

For the loaf: Preheat oven to 350 degrees. In a medium mixing bowl,
combine salmon, sutffing mix, mayonnaise, onion, celery, green and red
peppers, egg, salt, jerk seasoning, red pepper and white pepper. Mix well.
Shape into a shallow 8-by-8 inch baking dish. Bake 40 minutes. For the
sauce: In a small bowl, combine lemon juice, sour cream, mayonnaise,
cucumber, onion and dill. Mix well. Refrigerate until ready to serve with
loaf.
