Perfect Peppermint Patties
1-lb. box Powdered Sugar
3 Tbsp. Butter, softened
2 to 3 tsp. Peppermint Extract
1/2 tsp. Vanilla
1/4 cup Evaporated Milk
2 cups Chocolate Chips
2 Tbsp. Shortening
In bowl, combine first 4 ingredients. Add milk and mix well. Roll into 1
inch balls and place on waxed paper covered cookie sheet. Chill for 20
minutes. Flatten ball with bottom of glass to 1/4" thickness. Chill for
30 minutes. In a double boiler or in micro-waveable bowl, melt chocolate
chips and shortening. Place a patty on a fork and dip patties letting
excess run off, remove to waxed papered surface. Let patties sit-up and
harden for 24 hours before storing in container with tight fitting lid.
Lay your patties flat, lay a piece of waxed paper over layer of patties
and keep building layers between waxed paper until all patties are store.
Store in a very cool place or the refrigerator.
