4 center cut fresh tuna filets 6 - 8 ounce each
2 tablespoons olive oil
1/2 teaspoon minced garlic
1 tablespoon minced shallot or red onion
1 fresh jalapeno, minced, seeds removed
zest and juice from one lime
1/4 teaspoon ground cumin
1/2 teaspoon minced cilantro
pinch of fresh ground black pepper
Method
Combine all ingredients except tuna in a large bowl and mix.
Pour the mixture over the tuna steaks and let sit for 1 hour under
refrigeration.
Grill tuna on a pre-heated hot grill, approximately 3 minutes each side.
Can be served with tropical fruit salsa and or black beans.

TARRAGON MARINADE:
3/4 c. plain low fat yogurt
3/4 c. mayonnaise
1 minced shallot
1 tbsp. minced fresh tarragon or 1/2 tsp. dried
1/2 tsp. pepper
Juice of 1 lemon
3 tbsp. milk

Ingredients
1/2 cup dry sherry
2 tbsp grated gingerroot
2 tbsp low-sodium soy or tamari sauce
1 tsp light honey
1 tsp maple syrup
1 tbsp minced garlic
2 tsp dark sesame oil
2 tbsp minced cilantro
4 medium tuna steaks
