A recipe from my uncle many years ago, these are quick, easy, and
delicious. They also make a nice addition to salads.

Pickled Martini Mushrooms

2½ pounds button mushrooms
2 whole garlic cloves
2 small hot pepper pods
1 cup white vinegar
1 cup dry vermouth
1 teaspoon pickling spice
1 small bay leaf
½ teaspoon whole black peppercorns
¼ teaspoon oregano
2 tablespoons sugar
1 teaspoon salt

Wash and drain mushrooms. Skewer garlic cloves on a toothpick for easy
removal. Combine all ingredients in pot. Bring to boil. Simmer 10
minutes. Remove garlic cloves. Pack into sterilized jars. Store in
refrigerator, or may be processed in boiling water bath.
