I heard long ago that to differentiate between US and Canadian
Cheddar, the US' was colored yellow. In our local Kona COSTCO, one
can buy a "more premium" block of Tillamook white cheddar which has
apparently been aged longer. It is white and it is excellent and cost
a couple dollars more that the "normal yellow" cheddar.
