Put your surplus green tomatoes in brown paper shopping or six-pack
bags, one layer deep, and keep them in a cool spot. It's not foolproof,
but you should wind up with slowly ripening tomatoes for the months
ahead. For those tomatoes that simply refuse to ripen, or if you have
way too many to put into bags, you can fry them or pickle them, or
freeze them for future frying or pickling.
