It depends on the cut of beef I'm buying and what I'm planning to do
with it. I rarely (never?) buy Select grade. Choice for a chuck roast
which I'll slow cook (browned first, then braised, sometimes in a crock
pot with potatoes and other vegetables) is fine. When it comes to
steaks, taste is what matters. The chuck eye steaks I buy aren't prime
but they're nicely marbled and tender and have a lot of flavor so that
is what matters. They fall into the Choice category.
