Thank you. I buy large roasts but there are rarely any on display so
I ask the butcher to make up an eight pounder, they're happy to but
they usually say to continue shopping and come back in ten minutes...
half the time they will come out with the roast and look for me.
Large roasts tend to be a better cut, from a thicker section. If too
large I'll slice it in half when I get home. The small roasts, 3
pounders they put out are from an end, typically fatty and contain
gristle/silver skin. Sometimes I'll ask for a twelve pound roast,
I'll grind it and fill the freezer with packages of ground or burgers,
often part will become meat loaf. I've never in my life bought
pre-ground mystery meat... that's always made from scraps and ugly
parts that can't be displayed as roasts.
