I'm not sure. I'd guess it's something to do with the way the fat
drains away, but I don't really know the physics of it. All I know is
(and I've experimented with this) if you take bacon from the same
package and fry a slice, broil a slice, bake a slice and nuke a slice,
the nuked slice is noticeably far less salty than the other slices.
