Back in The Bonobos days, we had about a year where we had gourmet
breakfasts at Sunday band practices. On one of those days, I asked
our drummer what he was making, and he said, "Mayonnaise." Never
having tasted decent mayonnaise, I expected it to be disgusting, but
it was anything but. Freshly made mayonnaise is not mythical, and
with a stick blender it can be made with only one egg yolk.
