Hmmm ... I have to say that moszarella wouldn't occur to me or be my
first choice were I making a more traditional version. Might be
interesting.
Interestingly I did use mirin in the vegan test version I made tonight
.... mainly because I use mirin in practically everything containing
tomatoes and many things that don't;-)
