Default Cheese Grits Breakfast Casserole

First tasted this at a breakfast pot luck at work. The co-worker who
brought it was from Atlanta, GA. She gave me this recipe:

Cheese Grits Casserole

3 cups water
3/4 c. quick cook [not instant!] grits
1 c. shredded cheddar cheese
1/4 tsp. garlic powder
dash of salt
1 egg, beaten
2 Tbs. butter
a couple of dashes of cayenne pepper

Spray a 1-1/2 qt. casserole with vegetable cooking spray. Prepare
grits: bring to a boil in water with salt; cover and cook on low 5-7 min
until done. Add small amount of the hot grits to the beaten egg
mixture. Return to pan. Add remaining ingredients and cook over low
heat until cheese melts. Pour into a glass casserole dish. Bake 30-40
minutes at 350F or until set and lightly puffed. Let stand 5 minutes.
and cut into squares. Serves 4-6

IMHO, you could add cooked crumbled cooked sausage or crumbled cooked
bacon to this dish. Vary the types of cheeses.

I'd never been a fan of grits until I tasted this and realized grits
don't have to be dull as wallpaper paste.
