Using the convection fan with a dutch baby screws up the rise. I've never found the convection feature to be useful. OTOH, if you're talking about a small oven, it can make the oven act like a bigger one. That's a good thing.

I'm talking about small "toaster ovens." The convection feature allows you to use these tiny things to make baked goods that you wouldn't ordinarily be able to bake.
