??? Chocolate "tempering hot plate"? I have never owned such a thing, and am not even sure if they exist.

I DID buy a chocolate warmer which I use regularly to keep my dipping compound at 80-90F while dipping my English Toffee, but it only keeps melted chocolate warm enough to keep it liquidy.

Tempering chocolate is a process to keep the cocoa butter in chocolate able to set back up at room temps. Believe me, it's far beyond your meager chocolate understanding.
