I don't generally follow recipes. I used 10, yellow bell peppers, tops cut
off and seeds/membranes removed. I prefer green but this is what they sent
me. Salt and pepper inside the peppers.
Filling was a und of ground beef, 14ish oz can chopped, Italian seasoned
tomatoes and maybe 1/4 cup water. The liquid helps break the beef down to
smaller pieces. One chopped, large sweet onion. Additional seasonings, salt,
pepper, basil, oregano and parsley. Cook and break up until the meat is
cooked through and most of the liquid is cooked down. Add the powdery kind
of Parmesan in the green can and some cooked, long grain, white rice. I
didn't measure but probably used a cup of cheese and 1.5 cups of rice.
I cooked them in two baking dishes so I wouldn't have a giant dish in the
fridge. Pour red sauce on the bottom of the dishes. Just a little. Add
peppers, stuff. Pour the rest of the sauce over. I used two cans of cheap,
Hunt's brand with cheese.
Bake in a preheated oven. 350 degrees for about 20 minutes. Top with a
goodly portion of shredded Mozzarella. Turn oven off and let sit until the
cheese is melted.
