Hence the diabetes and obesity plague in the modern era amongst those
affluent enough to avoid physical work. That includes wheat and corn
in the west, of course.

For the sake of simplicity (as it's a complex/nuanced topic), I'll
keep it brief: 'carbs' are not essential, nutritionally speaking. In
moderation, they are fine but many people eat wayyyy too many (such as
yourself).
Humans and mammals evolved to crave carbs. Prior to agriculture, they
were a scarce resource. Now, they're ubiquitous and plentiful. Our
bodies were never designed to consume the amount the average person
does nowadays.
