If someone sued about bones, would that not make the 'winglet'
pieces more dangerous? (i.e. bigger bones, etc.)

Unless advertised as 'boneless', how could a litigant expect
a jury to believe bones should be absent in any piece of meat?

Much more likely, most people don't eat the tips.
