Metzger's Potato Salad

2 lb potatoes
3/4 C beef stock
1/2 C minced onion
1/2 C vinegar
1/4 C oil
1 t salt
1/4 t pepper
parsley

Cook potatoes and slice. Combine all ingredients. Serve hot or at room temperature.
