Don't judge a sausage by its texture!
I once found a local maker (Oakland, CA) that made "bologna like (sic)
texture" hot-links that looked like "foot-long hot dogs", but were
some of the best hot-links I've ever paid good $$ fer. This was back
in the 80's.
