CBH...couldn't it be chopped and mixed with scalloped potatoes, in the same way ham is?
If I didn't try to make a Reuben sandwich, that is what I would do.

OT: supper tonight is leftover fried chicken with mashed potatoes/gravy, and sliced beets
with butter. I love beets. ;-))
