There are different grades of Kampot pepper, do you have the red and
green types? I think it's better than the run of mill (excuse the pun)
pepper out there. I've been to a couple of pepper farms there - there
IS a difference in the taste, but whether it's worth it to you might
be another matter.

I don't use much dried pepper any more, we use the fresh green
immature peppers, more like a vegetable really. I really like it (the
wife doesn't care for any pepper) much more full flavoured than dried
