A favorite simple recipe is to use the below but not 'exact' recipe.
I'm an eyeball cook after all!

Cube roughly 2-3 cups of potatos
Chop 1 medium sized onion (volume about 1/3 of the potatos)
2 TB (heaping is 3 cups potatoes) duck fat
2 TB olive oil
Spices as desired

Using a cast iron large skillet, cook with a lid and stir about every
20 minutes until done to your liking.
