A few years ago I would have liked to try a jk choco. Now I am scared.
Jk needs to be cleaner and use food safe prep.
Jk being honest is admirable but hurts his goals. Better to be honest about cleanliness and do it the right way.

Take the certified food classes and allow the inspectors in. It is required.
