My DIL taught me this tasty snack to nibble.

Shred raw kale finely, put it in a plastic bag with a little olive oil
and shake until the shreds are barely coated. Then spread it out on a
baking tray and bake for a few minutes in a hot oven till crisp but
still green. Sprinkle salt if liked.
