My guess is that most of them are in Waikiki and cater to tourists. A few of those listed aren't buffets. A couple of buffets are popular with the locals: the Willows and Camellia Buffet. The restaurant down the street has a popular buffet but that's only on Sunday.

I'm not saying that the locals don't like buffets. They do. They just don't go to buffets in Hawaii very often. They probably go buffet crazy when they're in Las Vegas. We made sure to go to a couple when we were there. The buffets there are grand but I'm glad it's on the mainland and not here. OTOH, the best buffet I've ever been to is the one at the Waikiki Prince Hotel.
