Default Cooking large this weekend (part 2)

Finally! MEATLOAF!

Haven't made it in about 2 years but been craving it for the last
couple of months.
Used 3+ pounds of ground beef and added all the basics. I glanced
at a few recipes so as to not forget anything important but then
just winged it. It looks and smells good. It's almost ready to
take out of the oven.

This will be a killer lunch and dinner today and tomorrow with
plenty to go in the freezer too.

Basic planned meal - meatloaf, mashed potatoes, green beans and a
nip of brown sugar sweetened applesauce.

I put this giant loaf in a 9X13X2 pyrex baking dish but then
decided to divide it into 2 loaves in same dish. This allowed me
to slather plain ketchup on more of the toppings/sides. Unlike
many here, I absolutely love the baked and browned ketchup on top
once baked. I won't put plain ketchup on leftovers. I just like
the baked on topping. It's got a very different taste.
