Seems to be a thread disconnect but anyway the crawfish lasagna was not
exactly a red tomato sauce but more like a gumbo sauce with some tomato.
I've tried to recreate it but was not even close to the New Orleans
dish. There are a lot of things you could layer between those luscious
noodles that would probably be quite good. I've tried using the "no
boil" noodles in order to cut back somewhat on the total effort and the
texture was too mushy. Then I just used the standard dry noodle and made
the layers without boiling the noodle first and it worked perfectly and
had good texture. Made the sauce a little juicer than normal and held
overnight then baked.
