Maybe I will be the only one that actually replies to your question.

If I were making this the first time, I would go with what I think you
consider too little soy sauce. Soy sauce is usually way overdone.

You are very kind. Thank you. We have (only recently) learned to love soya
sauce, so that doesn't worry me too much.

As I said, I put in several 'glugs'

We have just eaten it and it was very good. The soya sauce didn't seem to
overwhelm it at all, but maybe that is because we have become used to it.
