I've used the refrigerated peeled chopped (minced) garlic in a jar. I
can't speak to your impaired tastebuds but to me it tastes like, well,
garlic. I mostly use it when something calls for just a clove or two.

For me the convenience of the jarred garlic is the main factor. I don't
use garlic in every little thing so unless I have something specific in
mind, heads of garlic sometimes dry up before I get around to using
them. I like having the jarred garlic on hand. Hope this helps.
