I was at a summer feed once, and someone made a "low carb" version of a tater salad, they substituted cooked cauliflower for the taters...it was quite tasty.

I forgot about the pickled, I sometimes make refrigerator pickles, so will pick up some cauliflower and give it a whirl this weekend...
