OMG! I could see my brother doing that last bit. Although he hates
vegetables, he loves nesting dolls.

I will look up stuffed eggplant. I used to make eggplant rollatine all the
time when we lived in NY. Had forgotten about that. Wasn't technically
stuffed because I would cut them in lengthwise slices then fry in a little
olive oil till soft. They were then rolled around a cheese filling such as
you would use in lasagna. I used to put an egg in there but I think it might
work without so long as I put some firmer cheese in there. Top with tomato
sauce, more cheese and bake. Sooo yummy! My eggplant was not breaded but
when you order this dish in a restaurant, it always seems to come breaded.

I will for sure be making this in the near future.
