I'll admit it's a little cognitively dissonant to buy a package of
"jumbo shrimp".
We have two systems (although one isn't very systematic) of shrimp
size nomenclatu
Number of shrimp per pound
Vague identifiers such as small, medium, large, jumbo, colossal.
Serious cooks try to buy their shrimp by "number per pound".
The term prawn is occasionally used for the largest specimens,
although usually on menus.
We use the word "shrimp" to refer to a particular class of
crustaceans; the defining feature appears to be that their legs
aren't strong enough to walk on.
Lobster have stronger legs. Generally, "lobster" unmodified
refers to Homarus americanus. I have eaten a fair number of
"African Rock Lobster" tails and "langostinos" as well.
Freshwater lobsters are generally called crayfish, crawfish, or
crawdads.
