When I make beans or do the Wendy's doll up procedure I eat it with saltines but also at times will add fritos around the sides of the bowl after microwaving it, or sometimes even before. I like sour cream as well. As a kid, my mother's side, not great cooks like my father's side, but everyone has something to offer - they would serve apple or blueberry pie with a large cold dollop of pure sour cream on top. I'm telling you it's better than ice cream. I like cold pie if I'm going to eat it, which is not often. Anyway, when I tell people about sour cream going well with pie they get this scrunched up look of disgust on their face - but it tastes a lot better than it sounds. And it's risk free. You can put the sour cream to the side. If you don't like it the pie is not ruined.
