I don't know about freezing, but I shred it and put it in pasta
sauce. I also slice it into matchsticks and saute in a little garlic
butter and season with salt, pepper and rosemary to serve along side
dinner. I make lots of egg dishes like frittatas, and zucchini diced
and cooked in those are wonderful. The kids eat them raw. There's
always zucchini breads and grilled zucchini as well.
