Howdy,

Here's an approach (from Julia Child IIRC...)

Shred a large zucchini. It will form a huge mound. Salt it lightly.
Let it rest for a few minutes. Then, put it through a potato ricer (or
some such) to squeeze out the liquid. That can be reserved for soup
etc.

The solids (and there won't be much) are then sauteed in butter with
some garlic, salt, and pepper.

It is a wonderful dish...
