I've used mine about 4 times in 3 yrs, but I see yer point.

I think those expesnive French mandolines are probably great for a
commercial kitchen, where a dedicated dishwasher always makes sure
it's clean and all the food prep staff can use it all the time. They
can afford to keep them sharpened and well maintained.

Fer yer home kitchen, buy a good knife.
