It's still "pita bread", but they don't use the pocket, wrapping the
stuffing in the whole flatbread.

Recipes vary, but if you do a search on "greek flat bread" (without the
quotation marks) via Google or another quality search engine, you'll
come up with more recipes than you can shake a stick at. Do another
search on "persian flat bread" and/or "afghani flat bread" just to round
out the choices you'll have.
