In one of his "Home Comforts" episodes James Martin made a garlic and
herb butter that I haven't tried yet but really want to. He doused
whole bulbs of garlic with olive oil and then roasted them in the oven
for about 40 minutes I think. When cool enough to handle, slice off
the top of each bulb. The roasting turns the garlic into a kind of
paste that you squeeze out of the paper skin like toothpaste from a
tube. Mix into softened butter with finely chopped herbs and use on
whatever you want; alternatively reform in cling film and chill until
solid.
