I would have added gravy if there had been enough drippings to make
gravy with. Sadly not. But still nice and tender piece of pork tenderloin.

The key is not to over-cook it. You can't tell from the picture but I
brushed it with <gasp> Dijon mustard and then rolled it in seasoned
bread crumbs before roasting it. I froze the leftovers. This is why I
have a freezer. Homemade dinner, 4 months later. When I don't feel
like cooking.
