Default Storm Food

The storms have just started here. Should have gone to the mailbox about
two minutes sooner as the storm hit just as I was getting the mail. Didn't
realize one could get rain in the ear. But now I know! The whole front of
our yard and driveway is a reddish brown now due to dried up tree needles
that have blown across it. We still have all of our utilities but there are
many downed lines and the wind/rain is supposed to get worse.

I decided to make dinner early and that worked out well. I got my other 4
fridge bins. I wound up using only 6 in the fridge. That allows me some
leeway if I want to put something like a plate or casserole in there. Put
the other two in my dry food cupboard where they are holding beans and wild
rice. They will stack. I did all of this while I was cooking the dinner.

I made a cross between Johhny Rozetti and Spaghetti Red. I used Penne
pasta, two small cans of tomato sauce (should have used a larger can), one
can of chopped tomatoes in juice, small can of corn (drained), one large
white onion (chopped), some leftover bell pepper in three colors (chopped),
salt, pepper, chili powder, grass fed ground beef and penne pasta. My
casserole was slightly to small to accommodate it all and still get the lid
on so there were perhaps a dozen or so pieces of pasta that wouldn't fit.
No biggie as I did a clumsy and flung a few on the floor in the process of
taking it up.

I cooked the beef and raw veggies while the pasta was cooking, then
assembled it all. It is now in a very low oven. I figure since it is all
cooked through anyway, if we do lose power it will at least be warm for us.
No clue when husband will be home as he seems to be on an odd schedule
today. And I have the news on so I know due to downed power lines and such,
there will be traffic delays. If we still have power in about 40 minutes, I
will turn the oven up and get it nice and hot. I want to make sure that I
don't overcook it as I don't like overcooked pasta.
