Default Mayocoba beans

What is your favorite thing to do with these? I made soup the other day
that didn't quite come out to my liking for a couple of reasons. One being
that my husband came home sooner than I had expected and wanted dinner so it
wasn't ready. I had wanted to put in celery and onions but instead just
threw in some dried onions (not enough) and wasn't careful with my
seasonings. So it came out slightly too salty, far too spicy and not cooked
down enough. I did run the potato masher through it a bit but would have
preferred to cook it down for at least another half an hour. Then as luck
would have it, he didn't even bother to try the soup. I think he would have
liked it too as he likes salty and spicy.

I then looked up a random recipe for soup using these beans and it was
pretty much exactly what I did except that it did call for celery.

I reheated the soup tonight and let it cook down more but I added a small
can of tomato sauce, three kinds of dried bell peppers, dried celery and
more dried onions. And the end result is perfect!

So... What do you do with these beans? I think I have two more bags and I
need to cook more beans. I might just season with salt, pepper and a little
cumin and serve them as a side dish. Will probably make ham steaks for New
Years and I always eat black eyed peas then but I am the only one in the
house who likes those.
