You'll never see restaurants grinding meat, they all buy preground
mystery meat.

Yup, what & who! The ONLY way to know is to grind it yourself, even
if you watch the butcher grind you have no way to know if their
grinder is clean, you have no way to know what was ground last and how
long ago... those big commercial grinders at butcher shops can hold
two pounds of meat in the body... watch the butcher grind the nice two
pound chuck steak you just picked out and what you'll get is the
mystery meat that was still in the machine, and after you leave the
butcher will take your nice ground steak home.
