Hominy doesn't necessarily have to be ground into grits. You can buy
canned whole hominy. A few images:

Can't see how whole hominy would work well for croquettes, though. I
Googled and found grits croquettes!

The recipe calls for chicken or fish along with the grits. So maybe
they're sort of like croquettes.
