Start with chilled leftover mashed potatoes. Add an egg. I also add
some minced onion - the dehydrated kind works just fine. Mix it all
together, form into patties and dust lightly with flour. I chill the
patties for a bit again in the fridge, then pan fry in a little neutral
vegetable oil & butter.
