I suppose unsold pre-sliced meat (where I shop) is packaged and goes
into the refrigerated case when the deli closes up. Deli workers go
home hours before the store closes, so late shoppers that want deli
meat would have to pick it up in packages. Same with the unsold
salads. They would be packaged and go into the deli refrigerator
case. Stores are pretty good about judging how much product will sell
in a day, so I rarely see any of either one in the refrigerated case
the next day.
Of course, Steve Wertz claims to be an expert on everything and thinks
he knows better than I do how my grocery stores operate. So (wait for
it).... here comes his pontification on the subject:
