This seems to be a perennial issue ( Lord - let the shepherd pie debate NOT arise again) - all I've ever heard it that refrigeration wrecks flavor, which is why I never buy more than a few toms at a time. Once I cut part of it away, tho, into a Rubbermaid it goes and it eaten the next day.
