I don't think it is really that we evolved to make more efficient use of a
scarce resource. I think that it is more the case of the existing chemical
pathways for extracting energy from fat were already very efficient with
sugars just due to the chemical similarity of blood sugar (glucose) and the
segments of sugar that make up polysacharides (starches).
