I'd change the sweet potatoes to white potatoes... I like sweet
potatoes but not for that dish. I like kale but you can substitute
spinach. Since the dish calls for garlic it's wasteful to use
shallots, it's one or the other... I'd use the garlic with plain
yellow onions.
