Have you ever tried Japanese carrot dressings as you often get if an
iceberg lettuce is served in a Japanese restaurant? Here's one that's
very low fat.

Ginger Dressing

It is called Carrot Dressing, but you don't taste carrot, just ginger.

1/2 cup chopped carrot
2 T mirin
2 T rice vinegar
1 T soy sauce
1" cube chopped ginger root

Grind all together in a food processor until smooth.

I would definitely recommend 2 t miso, 2 drops sesame oil and a little
more mirin. The color is best if a Lite Soy Sauce is used.
